Quinoa Salad

  • 1 cup quinoa (I used 1/2 cup of regular quinoa and 1/2 cup of red quinoa)
  • 2 cups water
  • 6 dry apricots cut into small pieces
  • 1/2 cup dry currants
  • 1/2 cup diced yellow, orange, or red peppers
  • Half a red onion diced
  • Chopped Parsley

Vinaigrette:

  • Lemon juice
  • Olive Oil
  • 1/4 teaspoon Coriander
  • 1/4 teaspoon Cumin
  • Salt & Pepper to taste

Rinse and cook quinoa according to package. Drain excess water, allow to cool, and toss with chopped ingredients and vinaigrette. Enjoy (Noosheh jan)!
